Vintage 7-Up Cake recipe

Cooking with sodas seems to be a Southern thing. If there's any way to make a food like cake even less nutritious, it's Southern. Thus, we have the classic confection known as a 7-Up Cake. You replace all the liquid that would normally go in the cake with 7-Up, and voila! A light, fluffy cake that you would swear bubbles in your mouth as you eat it.

You can make this cake in a Bundt pan (traditional), as a 9 x 13 sheet cake, or as a two-layer 9 inch round torte.

Preheat oven to 325 degrees F. Grease a bundt pan.

Cream together butter and sugar until fluffy.

Mix in the eggs one at a time until just mixed.

Add the lemon extract.

In a separate large mixing bowl, whisk together flour and salt until mixed.

Fold the flour mixture into the liquid mixture, then add the 7-Up. Transfer batter to prepared pan.

Bake the cake for 75 minutes or until tester comes out clean. The cake should be golden brown.

Cool the cake in the pan for five minutes, then turn the cake onto a rack to cool completely before icing.

For the icing, combine the powdered sugar, egg white, tartaric acid, and lemon juice in a small bowl.

Whisk together until the mixture thickens, then pour over the cooled cake.

Serves: 12.

7-Up cupcakes recipe

To make 7-Up cupcakes instead of a 7-Up cake, line a muffin tin with paper liners and pour in your batter.

Bake at 350 degrees for about 20 minutes or until tester comes out clean.

Cool and pour icing over the tops.

This makes about 18 cupcakes.

Tip: 7-Up is not as common as it once was on the shelves of lemon-lime soft drinks, but it is still around. If you can't find it though, any of the following brands would work just as well in its place:
